BÚN BÒ SA TẾ – Beef Sauté Soup with Rice Vermicelli
THÀNH PHẦN / INGREDIENTS:
– 0.5Kg bò nạm / 500g beef
– 300g bún / 300g rice vermicelli
– 100g sate / 100g satay
– Gia vị: đường, hạt nêm, bột ngọt, tiêu, nước mắm / spices: sugar, knorr, MSG, pepper, fish sauce
– 1 trái ớt đỏ lớn 50g bằm / 1 chopped big red chili 50g
– 50g tỏi băm / 50g chopped garlic
– 100g hành tím băm / 100g chopped shallot
– 100g sả bằm / 100g chopped lemongrass
– 100g sả cây / 100g lemongrass cut in 5cm
– 50g gừng / 50g ginger
– Dầu ăn / oil
– 100g hạt điều đỏ / 100g annatto
– Rau ăn kèm: rau quế, giá / veggies: Basil, beansprouts
– 300ml nước dừa / 300ml coconut water
– 1.5 lit nước / 1.5lit water
1. PREPARE ANNATTO OIL to get the orange color: use a pan or pot, pour 150ml oil and pour all annatto into the pan. Wait until it’s boiled and off the gas stove. Use a filter and just get the oil with orange color.
2. CUT BEEf as cubes shape in 2cm each piece. Boil a pot of water and pour all the beef into the pot with ginger to remove blood and residue. Pour out and wash with cool water. Then put in a basket.
3. Chopped all the lemongrass, red chili, garlic, shallot, slice ginger and put in a dish. Put a 1tbsp oil into a pan, then stir half of all the spices above until it’s golden.
4. MARINATE THE BEEF: marinate with 2tbsp annatto oil, 1tsp sugar, 1tsp knorr, 1tsp MSG, 1tbsp rock sugar, 1tbsp soysauce, satay, 1tbsp fish sauce and then mix well. Put there 1hour.
5. Prepare the broth: AFTER 1HOUR, stir all the rest chili, lemongrass… in the dish until it’s golden, then pour all the marinated beef into the pan and stir together. Stir until the meat is cook about 80%.
6. Use another pot, pour all the beef and spices together inside. Pour 1.5lit water and cook with medium fire.
Tips: if you don’t have instant pot, cook until it’s boil then cover it. Off the fire, put there 15miutes. Do like that 2 or 3 times, then beef soft and can save gas.
7. Pour coconut juice into the broth pot. Taste it’s again as your taste.
8. SERVE: eat when it’s hot with rice vermicelli and beansprout, basil.
Dipping sauce: lemon chili salt.
The soup is spicy and can keep warm for our body.
